Oatmeal, Coconut and Sunflower Cookies

These are good. I got this recipe from the Whole Foods website. They’re not the lowest-in-fat-lowest-in-calories, because they are COOKIES. At least they have oats and sunflower seeds!

Oatmeal, Coconut and Sunflower Cookies
Makes 24 to 30 cookies (I think I got more out of the batch)

Ingredients

1/2 cup (1 stick) butter, softened
1/2 cup sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon sea salt
1/2 cup grated unsweetened coconut
1/2 cup sunflower seeds
1 1/4 cups rolled oats, either quick-cooking or regular (quick cooking will make a finer cookie)
1 cup whole wheat pastry flour
3/4 teaspoon baking powder

Directions
Preheat oven to 375°F.

Combine softened butter with sugar until creamy. Stir in egg, vanilla and salt. Stir in coconut and sunflower seeds.

In a separate bowl, combine oats, flour and baking powder. Add oat-flour mixture to butter mixture and stir to combine completely.
Drop rounded tablespoons of dough onto 2 greased baking sheets. Bake the cookies, one sheet at a time, for 10 to 12 minutes, until lightly browned and just firm to the touch.
Cool cookies on wire racks. Store in an airtight container.
