Really Good CHICKPEAS??!!

I can’t believe it, but I found a great recipe for CHICKPEAS. Who knew?
I always thought chickpeas were rather uninspiring.
This recipe is great as a side dish or as a finger-food snack.

Serves 4


3 T olive or other oil (PLEASE do not use extra virgin olive oil, which is not intended for high heats)
2 cups well-drained cooked or canned chickpeas
1 T minced garlic
Salt and freshly ground black pepper to taste


  1. Preheat the over to 400 degrees. Place a large ovenproof skillet or roasting pan large enough to hold the chickpeas in one layer on the stove and turn the heat to medium. Pour the oil into the pan.
  2. A minute later, add the chickpeas, garlic, salt, and pepper. Shake the pan so that all the chickpeas are well-coated with oil and are sitting in one layer. Place the skillet or pan in the oven.
  3. Cook, shaking the pan occasionally, until the chickpeas being to brown, about 15-20 minutes. Remove from the oven and cool slightly. If desired, sprinkle with chili powder, curry poser, or other spice mixture, or with more slat and pepper; or simply with a little extra-virgin olive oil and some freshly squeezed lemon juice. Serve hot or at room temperature.

The chickpeas should be crisp on the outside and soft on the inside. ENJOY!
