Quick and Easy Dinner Recipe

I love this simple recipe and make this for dinner when I am in a pinch. It’s fast, easy, inexpensive, and healthy. And it tastes good! If you don’t have squash on hand, feel free to experiment with other vegetables – I’ve tried broccoli, mushrooms, and green beans and they’ve all been delicious.

Italian Vegetable Pasta

Ingredients
Pasta of your choice – I like farfalle or rigatoni
1 T olive oil (NOT extra virgin)
1/2 onion, diced
1 zucchini, sliced
1 yellow squash, sliced
Italian seasoning
1 can of diced tomatoes
1 can of tomato sauce
mozzarella cheese
salt and pepper to taste

Directions

  1. Prepare the pasta as directed.
  2. In a large skillet, heat the olive oil over medium heat. Add in the onions and cook until translucent. Add the zucchini, yellow squash, and Italian seasoning and continue to cook until the vegetables are slightly tender.
  3. Add the diced tomatoes and tomato sauce. Cover and let simmer for about 8-10 minutes.
  4. Add in the pasta and stir until everything is well-blended together.
  5. Serve and top with mozzarella, salt, and pepper. YUM.
