Low Fat Lemon Poppy Seed Cake

I made this cake today to take over to a friend’s party. I was a little concerned that it would be dry because it’s low-fat, and I used cake mix w/o pudding. It was amazingly delicious!

Lemon Poppy Seed Cake (low fat)

1 pkg. lemon cake mix with pudding
1 cup water
1/3 cup apple sauce
6 egg whites or egg beaters to = 3 eggs
2 T. poppy seeds

Mix together and pour in 10″ tube or 12 cup fluted Bunt pan. Bake 350 degrees for 35 – 45 min.

When cool – Glaze with:
1 cup powdered sugar
1 T. lemon juice
1 T. skim milk

Sprinkle poppy seeds on top of glazed cake.

For people who count: 5 WW points if you slice 12 servings
