Collard Green Wrap

I am in love with these collard green wraps that I first sampled while on my yoga teacher retreat in CA a few weeks ago.

Here’s what you need:

collard green leaf
sunflower seed butter (trust me – don’t try to use peanut butter)
avocado
sprouts
shredded carrots

Simply spread some sunflower seed butter on the collard green leaf. Top with about 1/4 of the avocado cut into small pieces, sprouts, and the shredded carrots. Roll it all up and enjoy!

I eat one of these for lunch plus an apple or grapes or whatever else I have around. It’s a great lite summer lunch.

    The wraps sound great. Do you cook the Collard Greens first?

    good question…NO you keep them raw. I usually cut out the bulkiest part of the stem 🙂
